So, you have come to learn the art of Anim Editing? You mean the art of swapping body parts, weapons, special effects and other things? Well then, you will first need to gather a few things...
From this point if I say anything in green then it is for The Titans Expansion only.
And any thing I say in red is the default path to a folder/file.
Ok here we go... Step 1
Goto your Age of Mythology directory and into the 'anim' folder (C:\Program Files\Microsoft Games\Age of Mythology\anim). In this folder create a new folder called 'aom' and create a second folder while still in 'anim' called 'aomx'.
Step 2
Now launch Vachu's BAR Explorer, goto File > Open and browse to your AOM directory and into the anim folder again, now double click the anim.bar file. There might be a few second delay but if or when the delay is over you will see the BAR Explorer looking a little like this:
Now goto Edit > Extract All To and browse to your new 'aom' folder (C:\Program Files\Microsoft Games\Age of Mythology\anim\aom) (yes I know the browsing is a bitch :P) and click ok. Now all the 876 files (to me anyway) have appeared in C:\Program Files\Microsoft Games\Age of Mythology\anim\aom- Yep, just like magic. For TT users- Extract the anim2.bar file instead of anim.bar and extract them to the 'aomx' folder you made (C:\Program Files\Microsoft Games\Age of Mythology\anim\aomx).

Ok that's the end of the 2 steps of the Intro part of the guide. Now for a tiny bit more of explainning.
What is an anim?
You may or may not have noticed that what you have just extracted has turned out to be mere text documents. But don't sweat, you extracted the right thing; and these text documents are the 'anims'- the files that control what weapons, parts, SFX etc goto which unit. Note that not all units have their body parts or weapons etc attached, some are directly on the 3D Model of the unit.
Finally, I'd just like to say, the pages seem very long but I assure you, you will quickly wiz through them all- it's just the examples and detailed explanations that take up all the space.
So, with that I end the Introduction to this guide. Now on to the first part.
